DD in da house

I am in love with my new recipe book! After seeing Jessica Seinfeld on Oprah a few months back, I have been hooked on this concept--hiding vegetables in your food...and it still tastes good. After not receiving it for my birthday or Christmas (after many obvious HINTS!)I buckled down and bought it. I read it for hours. I never read recipe books for hours! She has all the nutrition facts, helpful hints with picky eaters and vitamin content of all the veggies in this 50's looking bad boy.

Yesterday I pureed vegetables for hours to get started, but hopefully most of the work is done for awhile. Butternut squash, yams, spinach and today--cauliflower, carrots and broccoli. Last night I made the Applesauce Muffins and Green Eggs (scrambled eggs w/ spinach). My family devoured them. Taylor hates HATES eggs, but had no clue that the "Grinch Souffle" (as Tim named them), included her arch enemy. The other night I made a Watford classic dinner, Mushroom Pork Chops, but just threw in some pureed yams to the sauce. Tim asked me why it tasted sweeter, but had no clue. I am so tricky :) On top of this, I still serve whole veggies on the side and we get a double dose! For all you doubters and chocoholics...the brownies are even edible:

Brownies (with Carrot and Spinach)

Makes 12 brownies

INGREDIENTS

* Nonstick cooking spray
* 3 oz. semisweet or bittersweet chocolate
* 1/2 cup carrot puree
* 1/2 cup spinach puree
* 1/2 cup firmly packed light or dark brown sugar
* 1/4 cup unsweetened cocoa powder
* 2 Tbsp. trans-fat-free soft tub margarine spread
* 2 tsp. pure vanilla extract
* 2 large egg whites
* 3/4 cup oat flour or all-purpose flour
* 1/2 tsp. baking powder
* 1/2 tsp. salt

Preheat the oven to 350°. Coat an 8" x 8" baking pan with cooking spray.

Melt the chocolate in a double boiler or over a very low flame.

In a large bowl, combine the melted chocolate, vegetable purees, sugar, cocoa powder, margarine and vanilla and whisk until smooth and creamy, 1 to 2 minutes.

Whisk in egg whites. Stir in the flour, baking powder, and salt with a wooden spoon.

Pour the batter into the pan and bake 35 to 40 minutes. Cool completely in the pan before cutting into 12 bars.

April just bought this book too and tried to get me on the band wagon. I'm still a little leery with putting veggies in cupcakes!!

I might have to lie to Brian about those brownies. If he hears those 2 words together he might through up, well you know my Bri is a HuGe chocolate fan and not so much veggie fan. My friend Tasha just got this book too, -- we'll have to experiment! thanks for the tips. love you

I have seen Jessica on Oprah, RR and The Today Show but wasn't sure if everyones, "Oh, that was good" was an advertising gimmick or the real thing. I am glad to hear from someone that I trust that the hidden vegetables go undetected.

I got the book for Christmas too and it has been a lifesaver. Saylor eats ) fruit or vegetables but now I sneak them in all the time. She never gets constipated anymore and I feel like a better mom. Our favorite is the peanut butter banana muffins--no oil or butter at all. Saylor calls it the "delicious bread"
